High Tea and Less Coffee

One of my favorite things to do is to go out for high tea at one of the local resorts, The Phoenician, and nibble on little sandwiches, scones, and hot tea. So this past weekend I made my own high tea at home. I made some scones that were delicious and bought a jar of Lemon Curd and Orange Marmalade go with the scones. They were so good!!


Dessert Scones-

2 cups flour

1/3 cup sugar

1 TBS baking powder

1/2 tsp salt

6 TBS cold unsalted butter, cut into pieces

1 large egg

1/2 cup heavy whipping cream

1 tsp grated orange zest

Preheat oven to 425 degrees. Use a large ungreased baking sheet. Whisk together flour, sugar, baking powder, and salt in a bowl. But the butter in with 2 knives until the larges pieces are the size of peas and the rest resembles breadcrumbs. Do not allow the butter to melt.

Whisk together the egg and heavy cream, then add to dry ingredients. Mix until moistened. Form the dough into a ball and knead it gently again bowl 5 to 10 times. Transfer dough to lightly floured surface and pat dough into a 8 inch round about 3/4 inch thick. Cut into 8 to 12 inches and place 1/2 inch apart on baking sheet. Crush the tops with a little milk and bake until top gets brown, about 8 to 10 mins.

They were so good served with lemon curd and a pot of Jasmine tea! Yum!

I've been really trying to cut back on the coffee! I normally have 2 cups in the morning and 1 cup in the afternoon but lately it's been making me feel all jittery and dehydrated. So I've been doing just 1 cup in the morning lately and feeling much better.
Last week I had a really hard time... like major caffeine withdrawal, but now I'm feeling much better! So hopefully I can stick to it! :)

  2. Delicious scones...the lemond curd was good too. We both need to stop drinking coffee. Starbucks treat reciepts don't help.

  3. Oh those look good!!! You can do it! It was hard to cut coffee for me too at first but now I can go with only 1/2 cup a day! I put 1/2 coffee with 1/2 milk! :)
