Long Weekend of a little cooking and alot of eating out.

Well after the long weekend, I weighed myself today and fortunately only gained 1/2 a pound. Which is a miracle in itself with the way I ate! ;)

Saturday my friend invited my sister and I to her house to swim. She made us chips and guacamole and the yummiest strawberry margaritas and we just snacked and floated around the pool. It was so relaxing!

For some reason my husband decided to take me out to eat almost every day that he had off work! I feel like we ate our way through Phoenix all weekend, lol! We went out for italian on Sunday, to a movie at the new dine-in theatre with lunch on Monday, and then last night we went out for filet mignon. But I did manage to cook a little bit too.
One thing I've been adding into my diet is either a Cocoa or Strawberry VitaShake. My favorite one is the Cocoa VitaShake that I put in a blender with peanut butter, almond milk, and a banana. It tastes like a chocolate peanut butter milk shake, yum!
Friday night I made a new recipe from Growing Towards A Dream's blog for Thai Coconut Red Curry Shrimp. We loved it!
And for Sunday lunch, I made Bbq Chicken with Orzo Pasta Salad.
Bbq Chicken-
Preheat convection oven to 375 degrees. Add a splash of canola oil to cookie sheet, lay out thawed chicken breast tenderloins on cookie sheet. Season with salt and pepper. Bake covered with foil for about 15 minutes. Baste chicken breasts with bbq sauce and cook uncovered 5 more minutes or until chicken is cooked through.
Orzo Pasta Salad
combine:
cooked orzo
arugula
dried cranberries or cherries
pine nuts
basil
olive oil
fresh lemon juice
salt/pepper
We loved this pasta salad for something different!
Tonight I'm making chicken with rice soup with french bread and butter and taking it over to my mom's house, she's been sick for a few days with a chest cold and I hope it will make her feel a little better.
